Babcya's Medivnik - Honey Cake

All the grandchildren loved to
visit Babcya and eat her delicious medivnik. They would eat it plain or with
butter and always drink milk with it. They would sit on stools at the
kitchen counter with the 1960s white formica, eat their medivnik, and talk
with Babcya and Dziadzo if he was at home. Babchya always encouraged them to
eat more medivnik and drink more milk! She would especially encourage
George, Kolia, and Nadia because Babcya always felt they were too skinny.
Ingredients

4 eggs |

1 ¼ cup sugar |
 |
1 cup boiled and cooled honey |
 |
1 cup cold strong coffee |
 |
4 cups flour |
 |
1 teaspoon baking soda |
 |
3 teaspoons baking powder |
 |
½ teaspoon each of ground
cinnamon, nutmeg, cloves |
Directions
- Prepare honey by bringing to boiling point and set aside to cool.
- Prepare coffee by dissolving 3 to 4 teaspoons of instant coffee in
boiling water and set aside to cool.
- Grease and sprinkle lightly with flour 2 bread loaf pans and set
aside.
- Set oven to 280 degrees.
- Beat eggs with sugar until lemon color. Then stir in until blended all
the other ingredients except the nuts.
- When blended, mix up well.
- Stir in nuts and pour into loaf pans and bake at 280 degrees for one
hour.
- Test with toothpick in middle of each loaf. Ready when toothpick comes
out clean.
- If it shows raw batter on it, bake longer in ten minute increments and
test each time until done.
- Remove from oven and let stand in pans on rack for 10 minutes.
- Then using a knife, run it around the sides of the pan to separate the
medivnik from the pan.
- Using oven mittens, flip pan upside down over one of your palms and
give the bottom of the pan a good pound to release the medivnik onto your
palm.
- Then flip the medivnik right side up and place on a rack to cool.
