Pad Thai Noodles

Minh Boyle

A Minh Boyle classic.

 

Ingredients - Sauce

1 package

14 oz dried tamarin fruit

bullet

4 C water

bullet

2 C fish sauce

bullet

3C palm sugar

bullet

1 ¼ C water

 

Directions - Sauce

  1. 1. Soak the tamarin in 4C water for at least 30 minutes

  2. Knead the soaked fruit to extract the juice

  3. Drain, saving the liquid & pulp, and discard the solid parts

  4. This yields about 3C of juice

  5. Add juice and all remaining ingredients in a pot and boil it down until consistency is syrupy, about 10 minutes

 

Ingredients - Noodles

1 to 4 (14oz) packages of flat rice noodles (also called Pho noodles). Number of packages should be based on number of guests.

For each package of rice noodles include:

½ lb fresh bean sprouts

bullet

1 bunch scallions

bullet

8 oz fresh mushrooms

bullet

½ lb shelled shrimp

bullet

1 C cilantro

bullet

½ C dried flaked onions

bullet

2 eggs

bullet

Oil for frying

 

Directions - Noodles

  1. Soak noodles in warm water for 1 hour and drain. Use only a half of a package of noodles for each batch you fry

  2. Slice scallions in half lengthwise, then cut them into 2 inch long pieces

  3. Wash mushrooms and slice

  4. Cut cilantro into 1 inch pieces

  5. Heat 3T of oil in a frying pan. Add shrimp, mushrooms, scallion, season with 2 T of prepared sauce and set aside.

  6. Heat 3T of oil in frying pan. Add ¼ C dried flaked onions and stir. Add ½ package of drained noodles and stir. Season with the prepared sauce. If noodles are too dry, add ½ C of water. Stir until soft but not mushy. Turn off heat. Add 1 beaten egg and mix.

  7. Remove noodles from the pan and repeat with the other half of the package

  8. When all noodles are cooked, mix in the cooked shrimp, mushrooms and scallions. Add the bean sprouts and cilantro last. Heat thoroughly.
